As you know, I am always looking for ways to trick myself into thinking I am eating carbs, when I am not. Like here. However I do know that cauliflower is not a carb. ;)
So I came across a Cauliflower Crusted Pizza Recipe and I instantly wanted to try it. It was delishhhhhh
Ingredients:
- Small head of cauliflower
- 1/4 teaspoon kosher salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon died oregano
- 1/2 teaspoon garlic powder
- 1/4 cup of parmesian cheese
- 1/4 cup mozarella cheese
- 1 egg

Now this recipe was farely easy, but had quite a process to it. I also made some modifications to the recipe that I used.
First preheat the oven to 450 degrees. Wash and dry the cauliflower and cut off the florets, you will not need the stems. Normally you would use a food processor, but since I did not have one I used a blender. At this point I did not steam or cook the cauliflower in any way and I am not sure I would recommend doing that. The cheap ass blender I have was having a hard time chopping it up.
If you decide to cook the cauliflower after the chopping (like me) then place it in a microwave safe bowl and cover. Microwave for 4 minutes and dump the cauliflower in a clean towel and allow for it to cool down.
Once the cauliflower is cool enough, in which I so anxiously learned the hard way, wrap it up in the towel and ring out all of the water. Its suprising how much comes out and how it resembles pizza dough.

Then add the parmesian cheese, mozzarella cheese, salt, dried basil, dried oregano, gardlic powder, and the egg into one bowl. I didn’t use my hands like the recipe, I used a mixer, but both work great.

MAKE SURE YOU PUT SOME SORT OF NON-STICK ON THE PARCHMENT PAPER. I’m sure this is common sense to most but no to this gal. This caused a great deal of annoyance and stickage.
Then place in the oven for 8-11 minutes until its golden brown.
Next you get to add all of the goodies you would like. I was super boring and only had pizza sauce, rocatta cheese, and mozarella cheese. Then place it into oven for another 5-7 minutes until the cheese is melted and slightly golden.
